Prospects and challenges for international e-commerce of bakery products in the era of global change

Abstract

This article examines the prospects and challenges of international e-commerce in bakery products in the context of global changes. The introduction provides an overview of the current state and trends in the development of e-commerce in the bakery industry, emphasizing its importance for manufacturers and consumers of bakery products. According to Statista, the global e-commerce market for food and beverages totaled $168 billion in 2020, and is expected to reach $381 billion by 2024. Materials and methods include analysis of statistical data, reports from industry organizations and scientific publications on the development of e-commerce in the baking industry. Methods of comparative analysis, information synthesis and forecasting are used. The results of the study show that the main prospects for online trade in bread and pastries are: an increase in demand for the delivery of fresh products, an expansion of the assortment through specialized and functional products, personalization of offers, and the use of innovative packaging. Among the key challenges are the need to ensure fast and high-quality delivery of perishable products, maintaining the freshness and consumer properties of goods, ensuring food safety, and adapting to various requirements of national markets.
