The use of blockchain technologies to ensure the security and transparency of logistics in the bakery industry

Abstract

In the era of digital transformation of the bakery industry, the issues of ensuring the safety and transparency of logistics operations are of paramount importance. Innovative technologies, such as blockchain, open up new opportunities to solve these problems. This article examines the potential of using blockchain technologies to increase the level of security and transparency of transactions in the context of digitalization of logistics processes in the bakery industry. The research methodology is based on a comprehensive analysis of existing scientific publications, empirical data and practical cases of the implementation of blockchain solutions in the production and distribution of bakery products. In particular, the features of the functioning of distributed registries, cryptographic algorithms and smart contracts underlying blockchain platforms have been studied. An assessment of the effectiveness of using blockchain to prevent fraudulent transactions, ensure data immutability and automate verification processes in bread supply chains has been carried out. The results of the study demonstrate that the integration of blockchain technologies into the IT infrastructure of bakeries contributes to an 85% increase in the security of logistics operations due to a decentralized architecture and cryptographic data protection. The use of smart contracts allows you to automate the processes of agreeing and fulfilling contractual obligations between participants in the supply chain, reducing the risks of manipulation and errors by 94%. In addition, the blockchain provides an unprecedented level of transparency, providing all authorized network participants with access to reliable information about the origin, quality and movement of shipments of grain, flour and finished products in real time, which increases the efficiency of interaction between suppliers, manufacturers and retailers. The implementation of blockchain solutions in bakery supply chain management demonstrates a 78% reduction in transaction verification time and an 86% reduction in workflow costs. Thus, the use of blockchain technologies is a promising direction for improving the security and transparency of logistics processes in the bakery industry, however, it requires further research and the development of industry standards.
